A missing setting can be a mode boundary
If stabilization is missing, first check that you are in Video Mode. The manual limits the feature to that mode; moving between capture modes can therefore change which options are available.
This is narrower than saying the camera is defective, but also narrower than guaranteeing every video configuration supports stabilization. Follow the exact model’s settings rather than treating a family-wide feature list as a list of simultaneous options.
Prepare the card without sacrificing the files
Use the 19D card specification when choosing capacity and filesystem. Power the camera off before inserting the card; card handling and software mode selection are separate operations.
Transfer the media before reformatting. An existing card that needs preparation may still contain the only copy of earlier footage, so complete that transfer before clearing it.
